The Ireland Under 19 international cleared the ropes five times in his 24-ball 50 as the NCU side posted 129/3 against the Scottish champions.
Openers Jason van der Merwe (22) and Chris Dougherty (20) laid the foundations with a stand of 48 in 2.4 overs, before skipper John Matchett (23) shared a third wicket stand of 73 in 39 balls with McCullough.
The youngster then switched his attentions to the ball, with the left-arm spinner claiming two wickets in the first over of the reply, including Scottish international Craig Wallace.
Further wickets thanks to Jacob Mulder and a run out had the chase in tatters at 10/4, before they recovered thanks to a fifth wicket partnership of 83 between Jack Hogarth - who hit four sixes and fours in an unbeaten 47 - and former U19 international Aman Bailwal (41).
A final total of 93/5 ensured respectability without ever theatning to overhaul CIYMS, who are back in action on Tuesday when they take on Pak-I-Care and Hornchuch.
